Healthy weeknight dinner comes together in a pinch on one-pan with this Whole Roasted Sockeye Salmon Recipe. A sweet and aromatic dry rub and a light touch of citrus provide fantastic flavour. Serve with vegetables, potatoes, or a rice pilaf and you have a great hassle-free dinner on the table in 30 minutes.

Whole Roasted Sockeye Salmon Recipe

Serves 6

Ingredients

1 whole Nanuk Raw Sockeye Fillet
3 tablespoons olive oil
1 lemon, sliced
2 tablespoons brown sugar
1 tablespoon chili powder
1 tablespoon paprika
1 teaspoon ground cumin
Salt and black pepper to taste

Method

  1. Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper. Remove the sockeye fillet from the packaging and pat dry with paper towels. Make several shallow slits on one side of the fish.
  2. Place salmon cut side up on the baking sheet. Combine the oil, brown sugar, chili powder, paprika and ground cumin in a bowl. Brush mixture over the fish before seasoning well with salt and pepper.
  3. Carefully place the lemon slices into the slits on the fillet so they stand up. Bake 20 minutes in the preheated oven, or until fish is easily flaked with a fork.
  4. Transfer to a large platter for serving and enjoy!
