Smoked fish is a lifestyle in Europe – and salmon that hails from cold Northern waters is a favourite. We recognized that frozen wild salmon being exported to Europe should have a Canadian brand identification. From that need came the creation of Nanuk. The original Nanuk label was glazed (the dipping of frozen salmon into water to create a protective coating) onto each fish as a promise of quality.
Our exposure to the European smokers and their products taught us that there was a great opportunity for high-quality smoked salmon products right here in Canada. It wasn’t long before we acquired a powerful German smoking kiln, and started with Canadian troll-caught wild salmon. That’s how Nanuk smoked salmon products found their way into the Canadian market.
